Almond-Butter Bread

We are obv paleo people and we are obsessed with refinery29 (it’s our go to for EVERYTHING). So when we received an email from them that said 5 Easy Paleo Breakfasts You Will Love , we died. We have been on a paleo bread kick lately and had to try the Fluffy Almond-Butter Bread from Good Morning Paleo by Jane Barthelem.

It is delicious and very easy to make, good toasted with some ghee, as sandwich bread or just by itself! Enjoy!

Fluffy Almond-Butter Bread adapted from Good Morning Paleo by Jane Barthelem.

Yields: One 9 × 5-inch loaf 

Ingredients
6 large eggs 
2 cups roasted almond butter 
3/4 tsp unprocessed salt 
1 tsp baking soda 
2 tbsps apple cider vinegar 

Instructions 
Preheat the oven to 350°. Line the pan with parchment paper so it hangs over the sides as handles. 

In a large food processor or mixing bowl, place the eggs, almond butter, salt, and baking soda. Mix until smooth. 

Add the vinegar and mix very well. The batter should be the texture of smooth pancake batter. Pour the dough into the baking pan. 

Bake for 40 to 50 minutes, or until a toothpick comes out clean. Cool before slicing.

WE’RE BACK!!

After falling off the paleo wagon for the last month (longest we have went NOT paleo since starting in March), we are coming back full force and ready to get back to feeling amazing again. While on this hideous we went back to feeling all kinds of lousy, from bloating, crankiness, and fatigue just to name a few. We knew it was time to reincorporate PALEO back into our life 100% when working out was just not enough. When you see those quotes “80% eating habits and 20% exercise,” they aren’t lying and we are prof of trying to outsmart that myth. So this past weekend we made so many great paleo-friendly meals that we can’t wait to share with all of you! Stay tuned for the Paleo Pumpkin Espresso Loaf.

Keto (lchf) Egg Drop Soup
Ingredients:
4 cups chicken broth (could also use 4 cups water and chicken bouillon according to bouillon instructions)
2 Tbsp chopped Fresh Chives (I used Litehouse freeze-dried chives)
2 whole eggs
1 egg yolk
2-3 Tbsp salted butter
OPTIONAL*1 Tbsp Parsley*1 Tbsp Oregano*1 tsp Paprika*1 tsp red chili flakes (I ended up using Cayenne instead but I think I would stick with my first idea of Chili flakes next time)
Instructions:
Put the chicken broth in a sauce pot
Stir and bring the broth to a rolling boil
Add all the spices and herbs
Meanwhile, scramble the 2 eggs in a  small bowl with the egg yolk.
Once the broth is at a rolling boil, slowly pour the scrambled eggs over a fork- into the broth. The eggs will cook instantly and become almost ‘noodle’ like.
Stir this a bit and as the broth comes to a boil again.
In my opinion this recipe only makes 2 servings (maybe even 1 if you are super hungry hahaha) so once you separate the dish into two bowls. Top EACH bowl with 2-3Tbsp of butter (could use other oil/fat if desired) right away and stir until melted. Adding the cold butter to the hot soup, and mixing it will make the soup a wee bit thicker. Using a different oil won’t give that same result BUT will enhance the flavor and ratios. C:

Creamy Grilled Chicken Piccata (Paleo)

This recipe was inspired by The Pioneer Woman, we just paleofied it! A great “plan a head” recipe (chicken needs to marinate overnight) and it tastes just as good the next day!

Chicken
Juice of 1 lemon (3Tbsp)
3 Tbsp olive oil
1 Tbsp minced garlic
1 tsp salt
1/4 tsp black pepper
1/2 tsp basil or oregano
2 boneless, skinless chicken breasts

Pasta

1 spaghetti squash 
2 Tbsp Ghee
Juice of 2 lemons (6 Tbsp)
1 Tbsp minced garlic
1/2 cup coconut milk
2 tsp dried basil
2 Tbps capers

Chicken

Combine first 6 ingredients and mix well.  Place chicken in a ziplock bag and pour marinade over chicken. Place in the refrigerator overnight.  When ready, grill the chicken until its done.  Allow chicken to cool, then slice into strips to serve over pasta.

Pasta
Cook a small spaghetti squash by piercing the squash several times with a sharp knife and bake about an hour in the oven at 375 F. When done, cut open, remove seeds and pulp, and separate strands with a fork.

While chicken is grilling, place spaghetti squash in sauce pan with melted butter over medium heat.  Whisk in garlic and lemon juice.  Pour in coconut milk and whisk until hot. Add some salt and pepper to taste.  Add the basil and capers. 

Serve in bowls with grilled chicken on top.
